Pernigotti
Cocoa is a dark, unsweetened
cocoa powder used in Italy as a base
for gelato and pastries. Pernigotti,
the famed Italian chocolate maker,
removes less fat from its cocoa and
has none of the alkalis of Dutch processing.
This cocoa is easily soluble and produces
a more intense chocolate flavor. Use
for your favorite hot chocolate, caffe
mocha, ice creams, baked goods. It
is best for dusting your favorite
